

My kids love Chinese sausages and waxed meat and since I have so many in my fridge , I decided to fry rice with these sausages and waxed meat for our dinner.
Ingredients
1 lean meat sausage
1 pork liver sausage
1 wine sausage
1 medium piece of waxed pork leg or waxed goose drumstick
3 cups rice
2 medium size fresh eggs
1 tablespoon minced garlic
1 teaspoon minced ginger
Some chopped fresh spring onion
Salt , pepper , light soy sauce and sesame oil to taste
Method
Scald waxed pork leg with plenty of hot water to remove excess fat and smell , set aside.
In a rice cooker , place washed rice and chicken broth to cover slightly over the rice. Place whole sausages and waxed meat on top. Cook rice as usual according to your rice cooker setting. Once rice is cooked , remove the sausages and the waxed meat from rice and slice , set aside for later use.
In a heated wok , sautee minced garlic and ginger with some oil till fragrant. Add in the sliced sausages and waxed meat and stir fry till crisp and fragrant. Break the eggs in one by one and cooked till almost formed. Break up egg and add in the rice and seasoning. Fry over HIGH heat till well combined. Throw in the chopped spring onion , mixed well , dish up and serve HOT.

I have never heard of waxed meat. Is that common in North America too?

Lady Ren , waxed meat are popular with the Chinese in Singapore , Malaysia , Taiwan and China. Maybe hard to find in North America
I hate waxed duck, but love fried rice with chinese sausages.
Waxed duck can be found in Chinatown's Oriental stores. I'm sure there'll be some during the Lunar New Year season, esp in San Fran, Houston or NY.
Wendy I dislike waxed meat too but they taste quite nice after you blanch them in hot boiling water to remove smell and fat....not many people like waxed meat because they are greasy and have a strange waxy smell.
waxed meat? what does it taste like? i have never heard of it before. looks nearly like jerky sort of..but not really :P
Ann , it tasted salty and greasy before blanching in hot water , something like what you said " jerky "...hahahaha...not many people know how to enjoy it !
