Pork Belly With Arrowhead " Nga Ku "

This is my hub's favourite ! I always make it a point to cook something which he loves and try to learn more from my Hakka mum-in-law last time. As she is not staying with us so cooking dishes the same way as her has been quite a task initially but after subsequent trying and trying , I finally made it. As for the Nga Ku , I'd just peel thes skin and my hub dent it with a pestle in a mortar , I don't cut or slice them at all. In this way , natural flavor will be released from the Nga Ku and it remain very crunchy. This is one of the CNY dish I want to share with everyone . Nga Ku is not commonly available in Singapore on normals days so it is a special dish for us during CNY.

I adore pork belly dishes! Can't really tell what Nga Ku is from the picture. Are they bamboos?
