Bitter Gourd Dried Oyster Soup

This is a soup I cooked regularly for my family. My kids like most kids dislike bitter gourd , initially they put up strong protest but after several times of tasting and with lots of encouragements from me and my hubby and also I make it a point to cook bitter gourd in many different ways , they gradually learn to enjoy and will gladly help themselves with the serving without my nagging.

Ingredients

1 large bitter gourd ( seeds and rind removed )

300 gram fresh pork spare ribs
100 gram dried oysters ( mine are Korean oysters )
4 garlics ( skin removed and used in whole )
800 ml water

Method

Scald pork ribs with hot boiling water to remove smell and scum , set aside. Rinse dried oysters briefly , wash and remove seeds and rind from bitter gourd , cut into bite size pieces.

In a pot , add in pork ribs , oysters , garlic , bitter gourd and lastly water. Bring to a boil , remove any scum on the surface. Cover and boil for about an hour or slightly more on medium heat . Season with a little salt and serve hot with steamed rice

I never add bittergourd into soup, this is new to me, but kids doesn't appreciate bittergourd, dont think I have a chance to try this..

maybe add in some red dates.. sweeter taste, maybe kids will like it more? my girl also doesnt like bitter gourd but it is good for our body system.. cooling...

I never eat bittergourds.
Even after many attempts, I jusy can't swallow it.

No matter how people who drank the soup said it's not bitter,it's still so so bitter. But weird, I can take bitter Chinese medicine :)

The dried oyster makes this an interesting ingredient. I make this soup with salty mustard, bitter melon, and spareribs. I'll try with dried oyster next time.

MaryMoh , yes bitter gourd can be a delicious and healthy vegetable dish. Bitter gourd are not so expensive and readily available in Singapore therefore I can buy anytime I want.My mum and your mum and most mums I think always try their best to cook their family a delicious and healthy meal...my mum always complained I'm skinny when I was in my early twenties and always ( forced me to eat more )hahaha....

I love bittergourds but not DH and kiddos. My mum always add bittergourds to her slice fish soup, yummy!

I'm going to try your version one day, even if the family doesn't eat the bittergourds, at least they are drinking the soup ;-)

I enjoy bitter gourd but not the kids. Certainly a good recipe to try. Am growing bitter gourd and the plant is trailing on my fence.

I always enjoy bitter gourd with pork spare ribs. But at home I do not taste bitter. It is taste bitter you??
