
This is my favourite dish during my confinements , it is also my son Jermaine's and my hub's favourite. I cook this using premium sweet rice vinegar and old gingers.
Ingredients
3 pork trotters ( hair removed and chopped into bite pieces )
400 gram old ginger ( skin on and dented )
6 hard boiled eggs
2 big pieces of rock sugar
2 tablespoon premium sesame oil
1 bottle premium black sweet rice vinegar
1 big cup of water
Method
Blanch pork trotters in hot boiling water for a few times to remove scum and smell. Drain trotters and set aside.
Saute ginger with sesame oil till fragrant , put trotter , one whole bottle of vinegar , water and ginger into a slow cooker. Cover and braised on HIGH for about 2 hours , add in rock sugar and shelled hard boiled eggs. Cover and braised for another 1 hour on LOW till trotter are tender and aromatic.
Serve piping hot with steamed rice , unfinished portion can be kept in the same slow cooker overnight for next day consumption. The taste of the cooked trotter in fact taste even better if kept overnight. I love my rice soaked with the thick and fragrant vinegar sauce and I can even drink the sauce on its own....heavenly.

Looks so scrumptiously yummy:) Is old ginger like the Bentong ( in the state of Pahang)ginger which Malaysians like?

Bentong ginger is the most expensive ginger in Malaysia grown in Bentong, near Genting, I'm sure you know Genting:)
It is prized during confinement as it is more "hot" than the usual imported gingers.

Wendy ...thank you for letting me know more about bentong ginger...I'll check with the stall owner and see if those gingers I bought are Bentongs ?

aiyoi, i love this, but i have no chance to cook this as kids and hubby doesn't like this, i have to wait till back hometown and ask my mom to cook for me. Simply delicious!

I love this, i love this...can i know what type of rice vinegar you use? It is "八宝添丁醋”or other ...when i cook this, i like put in some "gula Melaka", also nice...
Oh this sounds so delicious...until recently I wouldn't try pig feet...they just seemed nasty...but they really are good eating!

Unfortunately this dish have to be cooked with black rice vinegar as it just don't taste " right " with white vinegar but anyway no harm trying , who knows you'll be the first person to invent a delicious pork trotter dish using white vinegar :D
